For hundreds of years, herbalist's
have been extracting the essences of various herbs for medicinal,
culinary, and other uses. A number of techniques have been
used over the years, but what do you call the process that
involves soaking or fermenting the herb in alcohol?

1. an infusion
2. a decoction

3. an extract
4. a distillation
|

The answer is 3 an extract. - An infusion is made when you pour boiling
water over fresh or dried herbs. A decoction involves boiling
the herbs in water. And a distillation is done through a process
of evaporation and condensation of steam.
